Description
VINEYARD CHARACTERISTICS
One vineyard in the district of Govone and one vineyard in Diano, both located about 300 meters (984 feet) above sea level with northeastern and eastern exposure and clay soil; Guyot vine training.
VINIFICATION AND AGING
Vinification in stainless steel vats, at a temperature of about 17 °C (62.6 °F). Fermentation lasts until late October. This wine is clarified with bentonite in order to lower protein content, which may cause turbidity (cloudy aspect) and oxidation. Filtered to prevent malolactic fermentation.
TASTING NOTES
Light straw yellow in color; delicate fruit aromas of pear and white peach evolve into complex floral notes with hints of aniseed, confirmed on the palate.
SERVING SUGGESTIONS
Best served at 10-12 °C (50-53.6 °F); Excellent as an aperitif or served with light dishes.
