It’s bottled at Cask Strength which gives the final product a raw, pure flavor that truly represents the Rye’s origin. The fermentation process is done using Champagne yeast, which allows for a 12-day fermentation that is 4-times longer than a typical rye, producing a high level of esters and orals, giving it a distinct and unique flavor profile. It stands out as a remarkable Rye, not your typical one.
