Sauvignon Blanc is often described using the word “gooseberry,” better known as groseille à maquereau in French, thanks to traditional Norman fishermen’s recipes that include these berries to season mackerel dishes. Indeed, the snappy taste of Salvard’s Cheverny brings to mind my grandmother’s delicious “Bouonia”: mackerel cooked simply in a pot of white wine, vegetables, lemon, and gooseberry.
