AGE OF VINE
50 years
GEOLOGY
The vines are located west of the village of Chassagne Montrachet. Soil: Stony soil, limestone with a little clay. The slope is very weak. 100% Chardonnay – Guyot with different seasonal processes in the vineyard (pruning, wire trellising / tying, leaf stripping).
VINIFICATION
The grapes are harvested by hand and sorted during the harvest. They are lightly pressed in a pneumatic press to obtain a slow extraction. After 24 hours cold settling and gentle racking, the wine is put in French oak barrels of 228 liters (25% new oak) for both fermentations (alcoholic and malolactic) with natural yeast for 18 months.
BREEDING
Maturing on fine lees. One month before bottling, the wine of the different casks is placed in a stainless steel tank to make the assembly. The wine is finally glued and lightly filtered before bottling according to the lunar calendar (day “root” for the wines of guard).
TASTING
Rich wine with ripe fruit fragrances. Length and soft on the palate impressive.
