For over 40 years, the grappas of Michele Chiarlo have been synonymous with elegance and a cleansing taste. In 2015, the grappas of the Palás range were created: Modern, silky, and charming.
We use small bain-marie copper stills with a discontinuous cycle: equipment that ensures delicate grappas with strong characteristics of the original grape.
It is important to distill fresh pomace which has not been pressed, meaning not particularly rich in must: we focus our attention on distilling a few days after the end of fermentation.
A grappa distilled from the pomace of one of the most ancient grape varieties of Piedmont, an elegant, harmonious and enjoyably aromatic grappa.
